Pujol Is Ever Evolving

The most famous restaurant in Mexico on its commitment to sustainability.

Pujol – named with a nod to Chef Olvera’s high school nickname – is world-famous for its marriage of authentic Mexican flavors and contemporary influence. It reopened in 2017 with a relaxed, mid century modern inspiration, utilising objects made and designed in Mexico. We spoke to the team to hear more about the culinary institution, almost two decades on.  

‘Like many other global cuisines, the concept of authenticity is always evolving in Mexico and the principle that ensures Pujol’s success is a willingness to adapt and unfold through our explorations of Mexico’s vast and abundant culinary traditions. Constant change is part of who we are.

Moreover, we believe that every single detail serves to convey the principles that distinguish Pujol. The minimalism and naturalism of our new space reflects our lens of interpretation: a commitment to intentionality and sustainability that shapes both our plates and the spirit of hospitality in the restaurant.’

With this reimagining of his first venture, cooking with smoke and wood, Chef Olvera has reconnected with his native Mexico City.

‘Our work at Pujol always tries to incorporate the three pillars of sustainability: a commitment towards the environment, social responsibility and fair economic practices. What this means day-to-day is sourcing from innovative fisheries like Jamat, who are sustainably farming Striped Bass in the Gulf of Mexico or working with farms like Yolcan, who are reviving  the chinampas of Xochimilco through Pre-Hispanic agricultural techniques.

It means paying our staff well while utilizing every part of each ingredient and minimizing waste. It also means utilizing local labor and building materials to create a space that conforms to its surroundings while offering a unique journey within its confines rooted in the local environment.’
