These little carb-y nuggets was pretty much all I ate during my pregnancy, well that and eggplant dumplings. Not at the same time though, bien sur! The other day I was so happy to finally have found organic egg-free gnocchi in my local food market. My favourite treat, with a vegan twist. They really are the perfect easy lunch on a cold day like today, at the moment I’m really enjoying smothering them in olive oil, sea salt and fresh thyme for a herb-y kick.
